Let’s look at how to make mushroom & spinach cauliflower rice.

This side dish full of veggies is a great alternative to plain cooked grains and can also be cooked with other protein food of your choice like it is a perfect accompaniment to tofu and tempeh and also chicken for non-vegetarian lovers out there!

  • 2 cups of spinach
  • 1 pack of Cauliflower stir – fry
  • Olive oil
  • ½ chopped onion
  • 2 minced garlic cloves
  • 3 cups of mushroom
  • Stocks of celery
  • 1 cup of parsley
  • 1 teaspoon of sea salt

Confused why rice is not a part of our ingredient list here? Well, they don’t be! Cauliflower is a magical ingredient that works as different ingredients in different recipes. This cool vegetable can be made into delicacies like a pizza crust, buffalo wings and for us it is rice!

We will first start with cauliflower and cut it into chunks and then add it to a food processor. Blend it till the time you get it gets into a fine mixture.

Heat a pan for one minute.

Put half chopped onion to the pan and cook it for about 4 minutes and keep stirring.

Now is the time to add mushrooms and 2 tablespoons of olive oil. Cook it for 4 minutes and keep stirring.

Keep cooking on low flame as now you need to add other ingredients one by one.

First, add cauliflower to the pan then celery to it.

Add sea salt and 1 tablespoon olive oil.

Cook the mixture on a medium flame for five minutes and then turn the heat to low.

Keep cooking for another 10 minutes.

Now, take a large bowl and add spinach and parsley to it. Combine the two.

As soon as cauliflower and other veggies are done, add spinach and parsley to it.

Drizzle one tablespoon of olive oil and mix all the ingredients
